#FoodieFriday is our favorite day of the week! Not only is the weekend almost here, but the weather is still warm enough to enjoy using that outdoor kitchen.
Here are a few fall meals you can cook in your outdoor kitchen today.
Simple Seasonal Recipes:
Roasted Sweet Potatoes & Onions
Ingredients:
2 large sweet potatoes (peeled and cut into 1-inch pieces)
2 medium sweet onions (cut into 1-inch pieces)
3 tablespoons of Olive Oil
1/4 cup Amaretto Liqueur
1 teaspoon dried thyme
salt & pepper
1/4 cup sliced almonds, toasted
Directions:
Heat oven to 425 degrees F.
Toss all of the ingredients into a medium-sized baking dish.
Cover the dish and bake the mixture for 30 minutes.
Uncover, bake for an additional 20 minutes
Sprinkle with almonds.

Red Garlic Mashed Potatoes
Ingredients:
8 medium red potatoes, cubed
2 teaspoons crushed garlic
1/2 cup butter
1/4 cup half and half cream
2 tablespoons white sugar
1/4 teaspoon steak seasoning
1/4 teaspoon garlic powder
Directions:
1. Place potatoes into a large pot. Fill with enough water to cover and add 1 teaspoon of crushed garlic to the water for flavoring.
2. Boil the water and cook the potatoes for about 10 minutes, or until easily pierced with a fork.
3. Drain the potatoes, add butter and mash until the butter is melted.
4. Mix in half-and-half, sugar, steak seasoning, garlic powder, and remaining garlic.
5. Mix potatoes with an electric mixer until smooth.
